Bruce Duff has 10 years experience as Executive Chef at local Kitchener-Waterloo restaurant.  His original recipes have been featured in the Waterloo Regional Record, Echo Weekly, Grand River Magazine and Rogers Television.  Bruce studied Culinary Management at Humber College and later apprenticed at The Walper Terrace Hotel in Kitchener.  He then went on to achieve his Red Seal designation.  After a tour of Nothern Ontario, he has brought his culinary skills to the Westmount Golf & Country Club, Guelph Place and Time Square Restaurant.  He is currently running the three restaurants and banquet facilities at the Heuther Hotel.  Chef Bruce will always strive to try new ideas or put his own twist on the tried and true.

Sample Menu: 
  • Shrimp and eggplant infused with fennel.
  • Arugula salad with avocado, melon, toasted corn, sunflower seeds and lime vinaigrette.
  • Cameroon roast strip loin crusted in cumin seed and ginger, and served with roasted yams and greens.
  • Baked apple and almond tartlette.
Tonight's Featured Menu: 
  • Carnival Cup.  Traditional Chicken Gumbo
  • Purple, Green and Gold.  Crawfish Cocktail with Avocado and Spicy Mango Remoulade
  • Beads....by the Dozen.  Jambalaya tossed with Cajun Shrimp, Smoked Turkey, Spicy Sausage and topped with Fresh Mussels
  • Parade Finale.  Bananas Foster......You had me at Rum!!
