Sam Russo is an acclaimed international Executive Chef, culinary trainer and restauranteur.  He has worked in the restaurant industry in the Waterloo Region for over 20 years, owning two of the Region's finest restaurants - The Italian Restaurant and Too Russo's.  Chef Sam travels extensively in North and Central America training young chefs, consulting for hotels and restaurants and integrating local customs and cultures into his repertoire.

Sample Menu: 
  • Spicy sauteed calamari with fresh hot peppers in a wine, garlic butter sauce
  • chunky vegetable salad with feta cheese tossed in a lemon / lime vinaigrette
  • Pork tenderloin medallions set in a Tequilla cream demi-glazed with cripsy roast potatoes and seasonal vegetables
  • Maple Bourbon creme brulee
Tonight's Featured Menu: 
  • Creamy Winter Squash Soup
  • Italian Salad.  Shredded greens surrounded with Sundried Tomatoes and Olives, Proscuitto and Parmesan in a Red Wine Vinaigrette
  • All-natural Bison Tenderloin topped with Herbed Butter and Veal Demi-Glaze.  Served with Roasted Winter Squash and Double Smoked Bacon Gnocchi
  • Chocolate Silk Pie and Raspberries
