Knife Course
"Just wanted to take a moment to thank you for the knife course that you put on last night, the course not only opened my eyes to how simple and easy de boning a chicken can be, but also to more correct and safe ways to handle my knives. I was also very impressed at the wealth of knowledge that you and Chef Natasha (I hope I spelled that right) brought to the evening, not only in knife skills but many other useful little tricks for in the kitchen.
Since the first time I walked in your shop you’ve made me feel very welcome and helped in showing me different cutting techniques that apply to the different knives that I use. I remember the first time I walked in your shop ready to buy a good quality knife but not sure what to look for, you stated “the only way to buy a good knife is to try it out,” you then proceeded to take a large selection of knives off the shelf and brought them to a cutting board and handed me a bunch of carrots telling me to “cut away.” I tried out many knives that day and you corrected my technique many times that day, but I finally decided on a 10 inch Shun Chefs knife which is amazing, for a first knife I can do pretty much anything with it and it remains razor sharp. Since that first purchase I have now realized that I have to have all my kitchen knives be good quality kitchen knives. So I returned a few weeks ago looking for some more knives to add to my collection, once again you were more than gracious enough to allow me to try out a line of Global knives which I have now fallen in love with, I purchased the 8 inch chefs knife, the 6 inch vegetable knife, and the 3.5 inch paring knife. I use all these knives everyday preparing the simplest of meals. I can’t believe how easy even difficult cutting tasks can be when you have the right tools for the job.
Thank you so much for helping me find the right knives for me, and also for being such a great host last night. I look forward to taking some more courses that you put on and also buying some more knives from you in the future."
